• Cheesecake

    It is a cross between a cheese cake and a fruit dessert. The best part is there's no baking involved and it's super easy to make.

    It's garnished with strawberries and blueberries and you can definitely make it anytime of the year!!!

    Prep Time: 20 min. plus refrigerating

    You'll need: 1 qt. strawberries, divided
    1-1/2 cups boiling water
    1 pkg. (8 serving size) Jell-o Gelatin, strawberry flavor
    Ice cubes
    1 cup cold water 1 pkg (12 oz.) pound cake, cut into 10 slices
    1-1/3 cups blueberries, divided
    2 pkg (8oz. each) Cream Cheese, softened
    1/4 cup sugar
    1 tub (8oz.) cool whip whipped topping, thawed

    Slice 1 cup of the strawberries, set aside. Halve remaining 3 cups strawberries; set aside.

    Stir boiling water into gelatin in large bowl at least 2 min. until completely dissolved. Add enough ice cubes to cold water to measure 2 cups. Add to gelatin; stir until ice is melted. Refrigerate 5 minutes or until slightly thickened (consistency of unbeaten egg whites).

    Meanwhile, line bottom of 13x9 inch dish with cake slices. Add sliced strawberries and 1 cup of blueberries to thickened gelatin; stir gently. Spoon over cake slices. Refrigerate 4 hours or until firm. (this step is interchangeable- if you use raspberry jello, use raspberries instead of strawberries, or blueberry jello then just put blueberries- you can have fun will all the variations!!!)

    Beat cream cheese and sugar with wire whisk or electric mixer until well blended; stir in whipped topping. Spread over gelatin. Arrange strawberry halves and remaining 1/2 cup blueberries on cream cheese mix for your favorite design.

    (the cream cheese mix is so tasty you can just make that and fill it into a ready made pie crust for a real cheese cake!)
